PATRICIA SCHMIDT
Dream artist.

Born in Sao Paulo (Brazil), Patricia has a degree in Advertising and Marketing and she has as well as pastry training obtained in schools in the United States and England. Since 2010 she has been working alongside Christian Escribà at the Pastelería Escribà (Escribà Pastry Shop) in Barcelona.

With her creativity, technique and 23 years of sleeve and nozzle mastery, she is a reference in confectionery. She has her own style and also creates new concepts.

Her passion for her work can be felt in her dream cakes, flowers, modeling and attention to detail.

She defines herself as a sugar artisan.

Author of three reference books and master in the different techniques of complex pastry -mini cakes, pastillage models, celebration pieces, sculptural design, floral recreations in elastic sugar dough, pressure processes, decoration with real and fluid icing, edible airbrushing... Her unusual artistic talent and her extreme formal delicacy have propelled her to the summit of high confectionery.

Patricia uses different types of sponge cakes and fillings, such as ganaches, jams and gelées, creating delicious pastries adapted to the tastes of the country. Thanks to Christian's influence, she incorporates many pieces of caramel or chocolate to her work, a total combination of pastry techniques in one cake.


CHRISTIAN ESCRIBÀ
Dream maker.

Christian is the 4th generation of a pastry saga that began at 546 Gran Via in Barcelona in 1906. He is the son of Antonio Escribà, considered the "Wizard of Chocolate".

He was trained in the greatest pastry shops in Barcelona and Paris. He completed this training in the prestigious pastry shop Dalloyau and in the restaurants L'auberge Peraudin and L'Homar a la Crème. At the age of 16, he won the gold medal at the competition for young pastry chefs in Deauville. At 17, he won the prize for the best artistic piece. In 1980, he won 2 gold medals in national pastry competitions.

He has taught pastry courses for professionals, some of them with his friend Ferràn Adrià, on satin caramel, desserts for restaurants, special productions, etc.

Creator of the first pastry show room in Europe.

In 2007 he was named best pastry chef in Spain by the Spanish Academy of Gastronomy, and became a member of the Academie de la Culinaire de France.

He has been appointed to give countless conferences and he is president of the jury of the World Chocolate Masters.

His hand has created works for Pope John Paul II, The King of Spain Felipe VI; rock legends like The Boss, The Rolling Stones or U2; soccer players like Messi, Luis Suarez or Ronaldinho and athletes like Vettel, Jorge Lorenzo, etc.
